Spiced Coconut Butternut Squash

Ingredients:
1 butternut squash (peeled and cubed)
1 can coconut milk (13.66 fl oz.)
1 tsp pure vanilla extract
1/2 tsp nutmeg
1/4 tsp freshly grated nutmeg
1/4 tsp cinnamon
1/2 cup dark brown sugar

Directions:
Preheat oven to 400 degrees. Mix all the ingredients in an 8x8 baking dish (I prefer stoneware dish). Bake covered for 30 minutes, then bake another 30 minutes uncovered. Take it out of the oven, let it cool a bit and serve....
